KETO TUNA MELTS

As some of you may know that I'm into Low Carb High Fat (LCHF) Ketogenic way of eating (WoE) since last year August 2017. The main reason I jumped into the Keto wagon was not because I want to lose weight, but more so that I wanted to lose some Body Fat and gain some good lean muscles. 
I have been working out in the gym for over a year now (some of you may know I'm a gym freak 😝) and I hit the gym 3 to 4 days in a week doing Cardio (BodyCombat & RPM) Strength training (BodyPump). I love the Les Mills group workout programs and enjoys it very much, well, why not when I also have a group of strong beautiful ladies who shares the same passion as I am. We motivates each other, and the best part is, we love ourselves to be willing to strive for the best for ourselves.

Ok, coming back to this WoE, I wanted to get into this WoE to lose what I need to lose and gain what I'm suppose to gain, and that's lean muscles. I understand that in this WoE, your body is train to use body fat as fuel ,and if you are doing strength training, you actually have a better chance of gaining your muscle mass, and that's what I'm training for.

Anyway, for those of you who not in this WoE, no worries, this Keto Tuna Melts are just as yummy for you as for those who are on LCHF / Keto. ....but of course I wouldn't suggest you to eat it too often, as you might know, high Carbs + high Fat = Suicide !! Once in a while should be fine.


I normally do meals preparation for a week since I started this WoE. I don't mind have the same food for a week , or at least 5 days a week, as it saves me time and headache to think of what to eat, especially when I'm at work.  This Keto Tuna Melts are just the perfect meal in fact, I would have one of it and 1 cup of my Bulletproof Coffee, and that will be my lunch 😋, totally satisfying and it's really yummy! Give it a try and you'll like for sure, moreover it's super easy to make too!

By the way, as I have mentioned "Homemade Mayonaise" in the recipe, you can refer to this Youtube video on how to make your own Homemade Mayonaise. It tastes so much better and one thing for sure, you know exactly what you put into it. As store bought Mayonaise has a lot of hidden Carbs (for those who are on LCHF / Keto WoE), we are very particular with the ingredients in all products. 😉

It's the final chapter for this year 2011



It's hard to believe that today is the final day for the Year 2011, no matter how hard I try to slow it down, and drag a little by little, it still has to come. I know I haven't been consistent, no matter how hard I try, those of you who knows me, will understand that I have been busy with not only my work in the office, and home , juggling housework and 4 kids, and also my part-time baking (orders from customers)........I know how greedy I am, some of you might think of me like that........LOL, well, I wouldn't deny, because I just love my life too much to let anything slip away.

I love my work as an Education Consultant, helping to place students into the right colleges and universities for the right reason, knowing that they are going to have a bright future ahead of them. I definitely love being a wife to my loving Hubby, whom I know loves me limitlessly each day, I Love YOU, dear!........and to top it off, my awesome "4 angels", LOL.....how could I asked for more from God. They are the ones that makes me work harder each day realizing that my dreams will come true if not because of them, and also for them, I live to be a better person and a more responsible person each day, knowing that I cannot be that selfish, as I have 4 kids to be responsible for if anything happen. Mummy loves YOU 4 lots!!

Last but not least, how can ever live my life without something I love to do.....and that is BAKING!! I can't find enough words to describe how much I love to bake, and have baked, and learnt and created this year, thanks to all of you who has given me the opportunity and support. I will post as much as I have missed and though it's outdated, it certainly are some great 'recipes' that you might like to try, and I suggest that you do......*wink*

The Start of a NEW YEAR in 2011........CHEESE BAKED RICE as promised

"Happy New Year" to all of you, if I can still say that some of you who are still patiently following my blog.....by this time , could have been bored to death with my last posting on the "Konnyaku Jelly" ...which was like since last October........yeah, you are right, I felt deeply "SORRY" for not blogging lately.....and really felt "BAD" for not keeping my promise in being a consistent blogger......and I felt truly "AWFUL" for owing so many of you recipes that you have requested from me and I have promise to post.......PLEASE ACCEPT MY SINCERE APOLOGY, FOLKS!! I promise to be good from now on........or else I'll punish myself for 3 months of "NO-BAKING"....which I think will definitely kill me, LOL ^_^...OK?? Deal??!! hehe.......

 I know I have tonnes of posting (I meant back-dated ones) to post and to clear my debts towards those of you that I owe.......but, don't worry , I will start with the very recent ones first, as the really old ones, I'll definitely bake and make again.......if the recipe is worth to be a keeper, so sooner or later, it'll be UP ;)

So, I'll start with the the celebration of me and my family "Welcoming the NEW YEAR 2011  on the eve of 2010....where I knew a few of you requested for this "Cheese Baked Rice" that I made for that night. I must say I'm not so much of a 'rice-person' as I would choose bread and pasta for rice anytime, hehe....but this "Cheese Baked Rice" was something that I would choose otherwise :)



CHEESE BAKED RICE
1.5 cups rice
2 cups water
A knob of butter (I put 1 Tbsp)
Salt and pepper to taste
3-4 cloves of garlic
1/5 cups pineapple cubes (Optional , I didn't put this)
1/2 cup button mushrooms, sliced
1 cup ham, sliced
3/4 cup Mozzarella Cheese, grated (or more, hehe)
3/4 cup Cheddar Cheese, grated  ( or more too, hehe)
1 can of Cream of Chicken Soup (do not mix with water, straight from the tin please)
Herbs of your choice, I used Rosemary, Bay Leave, Parsley and Basil and lots of Black pepper

Method:
  1. Melt the butter in a frying pan, then add in the garlic, salt, pepper and some herbs. Fry till fragant, then add in the rice. Fry for about 5 minutes and transfer to the rice cooker.
  2. Add the water and sprinkle some more herbs if you like. Let it cook.
  3. Add the sliced ham , mushrooms, pineapple and some black pepper to the rice when cooked. Stir and mix well.
  4. Dish into a baking dish or individual foil casing, add more herbs (trust me, it won't overdose, you'll regret if you don't, LOL).
  5. Evenly  spread the Cream of Chicken Soup on top of the rice, generously please, hehe.
  6. Sprinkle the grated Mozzarella and Cheddar cheese on top and bake at preheated oven at 200 degree Celsius for about 15-20 minutes, or until you see the cheese on top starting to brown and turn golden. Dig in and enjoy.........you'll love this, I promise!!
